Whereas the Bianco sits between the Dry and Rosso as a sweet white, the Dry Rosso is the opposite. The flavor profile of Rosso is maintained as full, gentle bitterness and tannins, bolstered by Nebbiolo, but transformed into dry vermouth by cutting sugar.
